I'm afraid I don't really have any real recipes to offer - But I love mushrooms as a side dish - ( or even as the main event! ) --
I usually prefer small button mushrooms ( nothing fancy! ) - and to simmer/sautee/steam them - I usually just cook them in water, perhaps with a little vegetable oil thrown in - Occaisionally, I have thrown in some herbs for seasoning, but that is not required for flavor - Of course, you can always fry the mushrooms, but then you have to be careful not to dry them out - "sauteeing" them gently is the best way to "fry" them...
At any rate, you wanna cook 'em until they lose any whiteness, and are grey throughout - and they come out hot & juicy...
There must be some wonderful things that can be done with mushrooms in an oven, too - but I haven't experimented with that one yet -

I'm a mushroom lover, too! I usually add garlic to them when I fry them. I bet there are some other recipes available somewhere. I love them coated in breadcrumbs like you get as an appetizer in restaurants.

My wife became a vegetarian when she was about sixteen years old - one of the few vegetarian options available for her at the Fish & Chip Shop ( besides the chips, of course ) were the batter-covered & deep-fried mushrooms on a stick... Later on, they added "Veg-A-Bobs", but just mushrooms were better - pretty greasy, of course - but they were succulent & juicy... Sauteed or grilled mushrooms also make a great topping for vegeburgers ( or regular burgers, if you prefer, of course ) ===
