...."taters, eh? What's taters?".......
And with those famous Smeoglian words is Middle-earth resounding with the heartiest, healthiest, most tastiest Hobbit soup ever.........
Mies en plas: 3-5 lbs thin skinned white potatos...diced (in gambling dice size) 1 pint heavy cream 1/2 gallon whole milk 2 sticks butter 4-quart (or larger) saucepan 4 large (the sassier the better) yellow onions diced small salt & pepper to taste (pepper ALWAYS fresh milled) cornstarch slurry (if needed)
Saute onions in one stick butter in 4 quart pan. Do NOT brown, but only saute until soft and transparent. Add the milk and potatoes.....underboil untill potatoes are soft Add cream and test for thickness, according to your taste ( I like my soup thick) If more thickness is needed, use cornstarch slurry.
Add salt & pepper to taste....pepper should be added liberally, as it brings out the flavor of the soup.
Add how much of the other stick of butter to taste also.
Steaming hot and creamy, I know of no friend who has not asked for seconds....or thirdsies for that matter, ;-)
Makes 8 large bowls for the whole family!
