I had mentioned in the ROTK syllabus that we would not really touch on the Appendices all that much since they would be covered more thoroughly in some other studies later. However, some of the information may be helpful and useful to you as you read the chapters in the ROTK.
If you would like to know more about Gondor as we enter into Minas Tirith, I suggest that you read the following:
Appendix A Annals of the Kings and Rulers
Section I Númenorean Kings.
(i) Númenor
(ii) The Realms in Exile
(iii) Eriador, Arnor, and the heirs of Isildur
(iv) Gondor and the heirs of Anárion
The Stewards
Appendix A relates to the lineage of the kings and how the Númenoreans descended from the Maiar, Elves, and Men of the Silmarillion on down to King Elessar's reign.
Appendix A also touches on the disputes between the kingdoms in the north and how the Dúnedain passed into the shadows and became a wandering people. Despite this, the true succession of the kings was not broken. Appendix A also tells how the southern kingdom did not remain a true succession of kings and finally died out and left the Stewards in place in Gondor.
Reading Appendix A will give you a clearer perspective of Aragorn, Denethor, and Faramir as we read through Book V and VI of ROTK.
If you are interested in the House of Eorl and the Kings of the Mark, I suggest that you read Section II The House of Eorl. Reading this is more for your own knowledge and interest and it will help you understand the Rohirrim. I liked the tale of the wild horses brought by Léod, Eorl's father. Now I understand a little more about the mearas.
Finally, when we reach Book VI, Chapter V The Steward and the King, I would like to suggest that you read Appendix A, Section I, (v) Here follows a part of the Tale of Aragorn and Arwen. The ROTK does not say much about King Elessar and Arwen's wedding not to mention much of their relationship at all! This section in the Appendices goes into more detail and will help you understand their love.

I would also highly recommend Appendix A Section III if you want more information about the history of the dwarves. It covers the history of Durin's folk from the founding of Moria, the awakening of the Balrog, Smaug's attack on the Lonely Mountain, the Goblin Wars, the Necromancer, Thorin & Company's adventure, the War of the Ring, and the end of Gimli's tale.
